Solving the problem of glycosidase inhibitors in food processing

The project aimed to understand the mechanism of action of multifunctional proteinaceous inhibitors of glycosidases and to determine their biodiversity and physiological role in the plant. This information is essential to optimise industrial processes by using modified enzymes, careful selection of raw material, choice of reaction conditions and with the option of developing modified crops in the future.
