Eat up your greens (reds, yellows & oranges)
Richard Faulks of the Institute of Food Research today told the British Association Festival of Science of the evidence to support health professionals' repeated calls for us to eat more fruit and vegetables.
"Fruit and vegetables contain thousands of minor components that may have health benefits" said Richard Faulks.
His own research is into the role of carotenoids, responsible for many of the attractive red, yellow and orange colours.
"Between 10% and 90% of chronic disease is avoidable. Diet has a key role in prevention of CVD, Cancer and Diabetes and in the management of mature onset diabetes."
