Salmonella areimportant zoonotic pathogens of great health and economic importance. Faecal contamination during slaughter of animals is virtually inevitable. However, to pose a threat to food safety Salmonella has to survive the passage through the food chain from animal to consumer. We will use the IFR Gel Cassette as a model food system to mimic growth of Salmonella in meat environments to examine the transcriptomic and physiological responses that facilitate survival in the food chain.
